CITRUS FRUITS RISOTTO WITH FJORD SMOKED STURGEON

Grate half a grapefruit, half a lime and half an orange rind and collect the juice. Soften the finely-chopped shallot over low heat in a small amount of oil ; toast the rice then sprinkle it with the citrus juice and cook it. Stir the risotto with a drizzle of oil, season with salt, add the grated grapefruit, orange and lime zest, complete with the sliced sturgeon and serve.
